Pandemic Brings New Butcher Business To Prospect Heights: Report

PROSPECT HEIGHTS, BROOKLYN — What started as a pop-up butchery in the early days of the coronavirus crisis has opened a storefront on Vanderbilt Avenue.

Prospect Butcher Co., a nose-to-tail butcher shop, recently opened at 665 Vanderbilt Ave., according to a feature in the New York Times.

The business started after Corey Hammond, who previously worked in e-commerce, missed having a local butcher when moving to the neighborhood four years ago. He eventually opened a pop-up butcher with Forager's Market's Greg Brockman in May and decided to make it a full-time venture.

“We couldn’t have gotten started without the pandemic,” Hammond told the Times. “The restaurant kitchen wouldn’t have been available for our pop-up.”

The worker-owned restaurant offers meats from farms as close as 32 miles away to as far as 230 miles from their shop. Their offerings include rotisserie chickens, charcuterie, condiments and seasonings, and sandwiches.

The new business is one of several that has been opened in Brooklyn as New Yorkers find new opportunities amid the coronavirus crisis, despite others closing as the pandemic strains the industry. Others on the horizon in Prospect and Crown Heights include a coffee shop and a Dean Street eatery.
