Goosefeather In Tarrytown Reopens With Indoor, Outdoor Dining

The menu, which features seasonal modern Chinese food by celebrity Chef Dale Talde, will be expanding in the future.

TARRYTOWN, NY — When celebrity Chef Dale Talde opened Goosefeather last fall, bringing seasonal modern Chinese food to the Hudson Valley, he didn't expect to have to almost reinvent his restaurant just a few months later. Now that he's reopened his establishment located on the grounds of the Tarrytown House Estate Talde is hoping to recapture the momentum lost during the new coronavirus outbreak.

Talde told Patch that the past few months have seen his family and staff stay healthy and safe.

"Which is great," he said, "and the feeling from the community, they have been so supportive to us over the past three months, and it means so much to us, especially being fairly new to the market."

The restaurant had to lay off some staff, but Talde was able to keep five employees on the payroll, and he was concerned about losing momentum and not being able to pursue the summer programing that had been planned.

Flash forward to the present day. Talde opened for outdoor dining as soon as it was allowed, and since the Mid-Hudson Region was approved for Phase 3 of the state reopening plan, he is now serving patrons inside the restaurant as well.

Obviously, it isn't be business as usual.

Talde said opening for outdoor dining was much more physically demanding considering how spread out everything is.

"We opened with a smaller menu," he said, "but plan to increase the size gradually."

Featured items on the Goosefeather menu include Dry-Aged Beef Potstickers with Chinese Mustard Horseradish, Kung Pao Chicken Wings with Buttermilk Dill Ranch and Char Siu Berkshire Pork Belly and half or whole Cantonese Roast Duck with Caramelized Hoisin and Drunking Fruit.

Specialty cocktails include the Soft Touch, which is made from Neversink Gin, Genepy le Chamois, Strega and Salers, and the aptly named Cruel Summer, made from Bourbon, Cynar 70, Lemon, Peychaud's Bitters and Chinese 5-Spice.

Understandably there are some changes to the way the restaurant will operate.

Because everyone will be required to submit a health declaration screening, undergo a contactless temperature check and leave full contact information, guests are being asked to arrive early enough before their reservation to go through the process.

Since seating capacity is limited, there is a temporary two-hour seating policy, and reservations may not be honored if guests are late.

Guests — as well as employees — must wear face coverings. No one will be allowed to enter the premises without a face mask. They must be worn by guests at all times when not seated at their table or when they are not able to maintain a safe social distance from other guests. That includes entering and exiting the building and moving from the dining spaces to the restrooms.

Talde competed twice on Bravo's "Top Chef," and also competed on "Chopped," "Iron Chef America" and "Beat Bobby Flay." His first cookbook — "Asian American" — was published in September 2015. Goosefeather is the first concept from Food Crush Hospitality, which is a partnership between Talde and his wife, Agnes.
