Fleishers Butcher Opens on Upper East Side

Fleishers Butcher officially opens its fifth outpost this Friday at 1325 Third Avenue (at 76th St.) on the Upper East Side.

The store will be open on weekdays from 10 a.m. to 9 p.m. and on weekends from 10 a.m. to 8 p.m.

“We’re thrilled to bring Fleishers to Manhattan in one of the city’s most vibrant neighborhoods,” CEO Ryan Fibiger told Patch. “The Upper East Side is a community with a rich history of quality merchants, and we are excited to bring a trusted resource to customers who care about where their food comes from and are seeking the best cuts of meat, raised responsibly and sustainably.”

Fleishers' first location was in Kingston, New York in 2004, where they had already started to "reinvent the idea of a local butcher shop through a positive change in the way they source, cut and cook better meat," according to their website.

The Upper East Side location is just the second butcher shop Fleishers operates within the five boroughs and the first in Manhattan. The other is located in Park Slope, Brooklyn. Their headquarters, where people can take butcher classes, is located in Red Hook, Brooklyn.

In 2015 Fleishers and Craft Butchery joined forces in an effort to produce better meat. Craft Butchery was founded in 2011 by former Fleishers apprentices, Paul Nessel and Fibiger, who led local butcher shops in Westport, New York and changing the way we raise and consume meat.

"We're masters, artisans, and creators, and we love to eat well," Fibiger said in a letter on the company's website.

The Fleishers shop will have many of the same items at the butcher counter that you'd find in Park Slope, including their incredible rotisserie chicken. A few new items that will be only at the UES location include:

• Mama O's Kimchi Paste
• Omnivore condiments
• Forager Juices
• Health-Ade Kombucha

• Plan Tea

To welcome Fleishers to the neighborhood, The Meatball Shop on the Upper East Side (1462 Second Avenue) will feature a new Chorizo Sandwich using Fleishers' house-made chorizo throughout the month of August.
