Thanksgiving Leftovers: What Do You Do With Them?

Dinner’s done and the only thing more stuffed than the bird is you. Now the question becomes: What to do with all those leftovers?
While many say simple reheating is all that’s necessary to have a “day after” feast, others have elaborate recipes for turning Thanksgiving leftovers into gourmet delights.
From savory turkey soups to sinfully delicious pot pies and mile-high sandwiches, everyone has their own ideas on what to do with what’s leftover.

Laura Otto: Got this idea from Rachel Ray last year: cut up all leftovers, layer them in a casserole dish, spread mashed potatoes on top and bake for 30 min at 350. Really easy!Jenny Winters Ketner: Turkey soup, turkey couscous salad and turkey pot pie!
Dana Kalbacher: I have made this Rachel Ray leftover casserole also..its very good! Turkey on the botttom, stuffing, any veggies,cranberry sauce and then top with a nice layer of mashed potatoes ..into the oven at 350 for about 45 mins. Enjoy!
S.B. Bonacker: Turkey Tetrazinni (family staple) and Fried Stuffing Patties with melted cheese and gravy on top (childhood favorite). We use our leftover whole cranberry sauce to make cranberry upside-down cake. And of course, soup is always made from the carcass, we usually make Turkey & Dumplings soup.
Anne Marie: Hot turkey sandwiches, cold turkey sandwiches, Mushroom omelet with turkey salad (same rec. as chix salad) on fresh baked ciabatta bread, Cranberry biscuits, poached pears in a cranberry orange glaze, Sausage Stuffing roll-ups, sweet potato pie (pureed from leftovers), green bean and mashed turnip crackers.. buttered, crispy and golden.... the lists are endless.
