Bubba Snider Introduces Lucha Late Night
Bubba Snider, 100.7 morning radio host and owner of Lucha Street Tacos and Bubba's Burghers and Beer talks about current challenges.
With an interest in introducing our South Hills Food To Go group to some of the local food scene movers and shakers, I had the recent opportunity to sit down with Bubba Snider, 100.7 Star FM morning radio host and owner of Bubba’s Burghers and Beer in Southpointe as well as the new Lucha Street Tacos in South Fayette. It was a great opportunity to talk about his perspectives on managing multiple small businesses in the current business environment, as well as explore some of his exciting new projects.
In discussing what it has been like to manage his restaurants over the last several months, Snider shared that he and his teams have had their share of challenges. From being forced to trim staff, to navigating the evolving directives on closures, re-openings, and occupancy allowances, it has certainly proved challenging. When asked his opinion on the various governmental and economic efforts to relieve the strain on small businesses, Snider shared that for him, they have been largely ineffective. “The rules aren’t always entire clear, and there seems to be a lot of contradicting information.”
Despite the challenges though, there have been some unexpected bright spots. As Snider’s restaurants have shifted their operations to comply with evolving state regulations, customers initially expressed frustration with the changes to normal dining routines. Snider and his staff consciously chose to ‘overcommunicate the rules’, finding that the extra transparency helped ease frustrations and actually led to appreciation from many for the steps they were taking to protect the health and safety of their customers. Snider shared that his teams are “actually going well above and beyond the CDC standards” in their efforts to provide a clean and safe environment in their restaurants.

Particularly exciting though is the more recent opening of Snider’s Lucha Street Tacos in South Fayette. Snider shared that “For us, the last 4 months have been primarily focused on getting Lucha Street Tacos off the ground. I originally came up with the Lucha concept in February 2019 and when we found the site (formally Bruster’s Ice Cream shop) we decided to make it look like an authentic taco shack. We worked through the various stages of planning and approvals with South Fayette Township and got word that we could open four days before the shut down in March. Fortunately, the Lucha Street Tacos concept was perfect for this scenario as it was always intended as a curbside/takeout concept.”
Snider and his team are excited to introduce their Lucha Late Night events beginning this Saturday, July 25th. The location will be open for regular hours from 12pm-8pm, and then close briefly to prep for 10pm-1am late night hours. Lucha Late Nights will include the introduction of taco specials that will be available during these extended hours only. This week’s menu will include smoked brisket and mongolian beef tacos, as well as island rum shrimp, yum, I know that I will be there.
