- Inspector Comments: Hot water is not provided at the 3 compartment sinks or handsinks. Provide at least 110°F water at the 3 compartment sinks and 100 °F water at the adult bathroom sink.
Dominick's Pizza, 842 Durham Rd Unit 10, Wrightstown

- Inspector Comments: Pizza Prep Unit is holding an ambient temperature of 52F. Internal temperatures of products in this unit were 52F. Owner stated that the unit was unplugged for a short time while cleaning was being conducted under and around unit. Must discontinue use of this unit until it can properly reach 41F or below. Some items were moved to other refrigeration that is holding proper temperature.
- Single-use & single-service articles: properly stored & used
- Inspector Comments: Take out grocery style bags are being used to store food in walk in freezer. Plastic grocery style bags are not too be used for food contact surfaces. Must replace with food grade bags, wrapping or containers. Remove all take out bags from storage.

- Inspector Comments: Food workers observed using bare hands for preparing ready to eat food. Disposable gloves, deli tissue, tongs or similar utensils must be used to prevent bare hand contact with ready to eat food.

- Inspector Comments: Texmex egg rolls were placed in the prep bottom to cool after preparation. Food that is cooked or prepared must be cooled rapidly as follows: Cooked time/temperature control for safety (TCS) food shall be cooled as follows: (1) Within 2 hours, from 135°F to 70°F. (2) Within 6 hours, from 135°F to 41°F or less Time/temperature control for safety (TCS) food shall be cooled within 4 hours to 41°F, if prepared from ingredients at ambient temperature, such as reconstituted foods and canned tuna. Cooling must be done in the walk-in for rapid cooling.

- Inspector Comments: Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Saute prep top was not holding food at a safe temperature. All affected food were discarded. Crabcakes in the walk in were not at a safe temperature. These were discarded.

- Inspector Comments: Observed containers stacked directly on top of food in the prep units. Observed food stored on the floor in the walk-ins. ;Nothing can be stacked directly on top of food to prevent contamination. Food and food contact surfaces must be stored at least 6 inches above the floor.

- Inspector Comments: Food is not being cooled to 41°F prior to placing into a cold holding unit. Cooked time/temperature control for safety (TCS) food shall be cooled as follows: (1) Within 2 hours, from 135°F to 70°F. (2) Within 6 hours, from 135°F to 41°F or less. Time/temperature control for safety (TCS) food shall be cooled within 4 hours to 41°F, if prepared from ingredients at ambient temperature, such as reconstituted foods and canned tuna.

- Inspector Comments: Knife was stored between kitchen equipment. Ice scooper was stored on the counter top. In-use utensils must be stored in a clean and dry container or area.

- Inspector Comments: Observed containers stacked directly on top of food in the prep unit. This is not approved. Stacking on top of food may contaminate the food. Items were removed and discarded.

- Inspector Comments: Food on display does not have a time on them when they are to be sold by or discarded. If time--rather than temperature--is used as the public health control the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. On display pizza slices were discarded.

- Inspector Comments: Observed peeled garlic containers being used as food storage containers. This is not approved. These containers are considered single service articles and must be discarded after the original product in the container has been used.

- Inspector Comments: Observed ice build up accumulating on boxes in the freezer and freezer condenser. Observed food and grease accumulating under the fryers and ice machine in the kitchen. Clean at a frequency that prevents accumulation.

- Inspector Comments: Mechanical warewasher is unclean and not operating properly. This machine must be repaired or replaced. A service report or specs for a new dishwasher must be submitted to this department. This machine is accumulating dirt and grime along the interior of the machine.

- Inspector Comments: Knives were stored in between kitchen equipment. This is not a sanitary location to store food contact surfaces. Knives must be washed and sanitized. Utensils must be stored in a clean and dry location that prevents contamination.

- Observed rodent droppings inside the prep top unit. All food stored inside this unit was discarded. This must be cleaned and sanitized.

- Walls, floors, and interiors of equipment in the kitchen are unclean with accumulation of grease, food, and dirt. A deep clean of the kitchen must be conducted. All equipment must be pulled out from the walls so the areas underneath can be properly cleaned.

- Inspector Comments: Observed food thawing in standing water. This is not approved. Thawing must be done under running water or inside a refrigeration unit.
