One side of the deli display case (above the compressor) was held at 46 degrees F. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. PIC moved deli meats to the other side of the deli display case at 41 degrees F.
Deli meats and cheeses, located in the walk-in cooler, were not date marked. Ready-to-eat potentially hazardous food , opened and sliced in the establishment and held for more than 24 hours, must be marked with the date of package opening.
Boxes of food are stored on the floor in the walk-in freezer. Food must be stored at least 6 inches above the floor.
The nonfood-contact surfaces of the outside of the deli display case, outside of refrigerator, and various shelves have an accumulation of dust, dirt, food residue and other debris.
The receptacle in the women's toilet room is lacking a cover. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
The vents in the walk-in cooler and compressor under deli display case have an accumulation of dust, dirt, and other debris. The physical facilities shall be cleaned as often as necessary to keep them clean.

Various items (see disposal form) were held in the prep unit between 45-53 degrees F. The ambient temperature of the unit was 52 degrees F. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. All potentially hazardous food items were voluntarily disposed of during inspection. This unit cannot be used until it is repaired and can maintain a temperature of 41 degrees F or below. Person in charge contacted a refrigeration company during inspection and scheduled an appointment for this afternoon.
The establishment is not maintaining pH logs for the sushi rice. Establishment shall maintain pH logs for each batch of sushi rice. A ph log was provided during inspection. Inspector will review the log at the follow up inspection.

The sink used for food preparation has an air break and is lacking an air gap. A direct connection must not exist between the sewage system and a drain originating from equipment in which food is placed
The floors in the dishwashing area are constructed of rubber material which is not durable, easily cleanable or nonabsorbent. The materials for the floors must be durable, easily cleanable and nonabsorbent for areas suject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms. Person in charge said that the floors are in the process of being replaced and it should be completed by the end of September.

The gasket of the walk-in cooler is not in good repair and needs to be replaced. PIC told this during inspection.
The nonfood-contact surfaces of the fans and speed racks in the walk-in cooler, the gasket of the walk-in freezer, the ice machine, and the cappuccino machine have an accumulation of dust, dirt, food residue and other debris.
The outside dumpster is not tightly covered. Receptacles and waste handling units for refuse, recyclables and returnables shall be kept covered.
