Floors are in poor repair with exposed wood. Floors are scheduled to be repaired this year. Repairs to physical facility are scheduled.

The moldings to the walk-in cooler (top and bottom) area is in poor repair ad are no longer smooth durable or easily cleanable. The physical facilities must be maintained in good repair.

The ceiling in the kitchen area is covered with tiles that are not smooth, durable and easily cleanable. Frozen shrimp was observed thawing on the counter. Potentially hazardous foods must be thawed in one of the following ways: under refrigeration (41 degrees F or less), completely submerged under running water, as part of the cooking process, or in the microwave if cooked immediately after thawing. Shrimp was relocated to refrigerator for proper thawing.

Wet wiping cloths are not stored in a chemical sanitizer between uses. Wet wiping cloths must be stored in a chemical sanitizer at the appropriate concentration. Sanitizer buckets were provided during inspection.

Knives were stored in between prep units. This area is not easily cleanable. Knives replaced during inspection and in between units cleaned.

Roof to establishment is leaking into kitchen and food prep area. Person in charge stated they came in this morning to notice the leaks and roof had been cleared and treated. Evidence of leaking ceilings along beams and seams observed throughout the food prep area. Food prep tables and food storage areas were relocated during inspection to prevent contamination. Landlord to be contacted regarding roof repairs. The physical facilities must be maintained in good repair. Proof of repairs to be submitted to RIDOH.
