The new location will also offer a full bar, including local craft beer, cocktails and happy hour specials to cater to the burgeoning business community in Generation Park. Bibo’s is slated to open in late April.

“We want Houston’s foodie scene to be well represented within our development and this is just the beginning,” said Ian Adler, Director of Marketing at McCord Development. “We’re excited to have Jon and Mary, Lake Houston locals, take their popular Bibo’s concept to the next level at Redemption Square.”

Owners Mary Huynh and Jon Nguyen said they’re thrilled to offer their food to a new group of customers in the Lake Houston area and to be one of first of many local restaurateurs coming to Generation Park’s Redemption Square.

“We’re excited to bring our take on traditional Vietnamese food to Generation Park,” said owner Jon Nguyen. “We make everything from scratch so families and businesspeople in the area can come to Bibo’s for a quality, home-cooked meal.”

Other tenants include BB&T Bank, which opened its 24th branch in Houston on the ground floor of 250 Assay St. on March 26 and Sub Zero Nitrogen Ice Cream and Café Rian will open across the waterway from Redemption Square in the West Lake Village Shopping Center.
