Happy 2020 to you all! I hope everyone is back safe and sound from travels, guests have come and gone, decorations are put away and the house is back in order. I have to confess, I didn’t even have time to put up a wreath this Christmas before having to go out of town. I vow to get on decorating much earlier this year. And for the first time ever, our son, Carlos, spent the holidays away from us, on a layover in Guadalajara. With a nod to the Italian side of my husband’s heritage, I served a Feast of the Seven Fishes for Christmas Eve – fried tilapia, sautéed rockfish, crab and shrimp campechana, confit salmon, baked mussels with cheese and tamago, and deep-fried oysters. I had hand carried a 20-pound prime rib roast so everyone could enjoy Texas beef for Christmas dinner. Served with scalloped potatoes and green beans, that giant hunk of meat was a star.
