Austin's Tatsu-Ya Family Unveil DipDipDip Ice Cream
Life in Austin has gotten that much sweeter after news of bolstered funky fresh, artisanal ice cream offerings from renowned restaurateurs.

AUSTIN, TX — Living in Austin got that much sweeter: Owner/Chef Tatsu Aikawa and the Tatsu-Ya family have unveiled DipDipDip Ice Cream, the funky fresh, artisanal ice cream side of recently opened DipDipDip Tatsu-Ya.
That's fun to say, and equally fun to write in a lead sentence: DipDipDip. But we digress. The opening on Saturday, Sept. 14, at the ice cream order kiosk and window located in front of DipDipDip Tatsu-Ya (7301 Burnet Rd., Ste. 101) will usher in regular service from noon to 9 p.m. Sunday through Thursday and noon to 10 p.m. Friday and Saturday.
DipDipDip Ice Cream will feature composed ice cream creations made with local milk cream and buttermilk from Hill Country Dairies and built in house-made, hand-dipped mochiko waffle cones made from mochi flour, officials described with mouth-watering-inducing description. Guests will walk up to an interactive touchscreen kiosk on the DipDipDip Tatsu-Ya patio and choose from a selection of complete ice cream desserts and assorted extra toppings before picking up at the service window.

“I was craving ice cream one day and the inspiration came to me while I was working on DipDipDip Shabu-Shabu," Aikawa said in an email. "I had this vision of fully composed funky ice cream cones and sprinkling in Japanese flavors and ingredients along with other unique additions. And with all of the dipping happening on the Shabu-Shabu side, I was inspired to have house-made dipped cones as the edible vessel."
With all ingredients — including cones, ice creams, and toppings — made in-house, DipDipDip Ice Cream will feature uncommon, out-of-the-box desserts, ranging from the Cha-Cha Matcha, with matcha ice cream, kuromame beans, azuki sauce, and whipped creme fraiche; and the Sum Yum Yuzu, with yuzu mascarpone ice cream, strawberry black pepper meringue kisses, strawberry preserves, and shiso; to funkier variations like the Shroom of Doom, with caramel, chocolate and shiitake, sweet sherry vinegar, candied hazelnuts, and crispy parsnips; and the Miso PB&J with miso croutons, candied peanuts, and angelino plum jam.

Affectionately referred to as “Sanrio on Mushrooms,” original graphic art featuring unique animations and characters designed by Tatsu and graphic designer Mike Davis of Burlesque Of North America will adorn both the space and the self-serve kiosk.

In fall 2012, Chef/Owner Tatsu Aikawa started Ramen Tatsu-Ya with friends and family. After spending some time at the Michelin-starred kaiseki/sushi bar Urasawa in Los Angeles, Tatsu decided to return to Austin in the pursuit of introducing authentic Japanese ramen to Texas.
