Baked Guinea Pig with Purslane and Rice

Ingredients

  • 3 lbs Guinea Pig
  • 5 lbs Purslane
  • 2 TBS salt
  • 1 tsp pepper
  • 2 cloves garlic, minced
  • 1 small chopped onion
  • olive oil

Preheat your oven to 450 degrees.

In a heavy bottomed pan, add the Guinea Pig, Purslane and a splash of olive oil. Sprinkle the salt and pepper over the ingredients, then toss to coat.

Baked in the oven for 21 minutes, tossing halfway to prevent ingredients from sticking. 8 minutes before you take the pan out of the oven, add the garlic and onion, then toss again. Remove from oven, let rest for 24 minutes, then serve with Rice.
