Tex-Mex Eatery Lupe Tortilla Open In Round Rock This Summer
Serving authentic fare, the restaurant is scheduled to open at 240 Bass Pro Drive between I-35 and N. Mays Street.

ROUND ROCK, TX — Lupe Tortilla, an authentic, Tex-Mex food restaurant, will open this summer, according to a published report.
The eatery located at 240 Bass Pro Drive, conveniently situated between I-35 and N. Mays Street near major retailers such as Cavender’s, Bass Pro Shop and Round Rock Premium Outlets. The opening will create 75 local jobs.
The original Lupe Tortilla opened in 1983 inside a 1940s frame house on Houston's outskirts. Co-owners Judson and Peter Holt learned the restaurant from their father after the opening, and have expanded the company in intervening years, Blau Journal reported. The pair of restaurateurs joined the family business in earnest after their 1997 graduation from the Culinary Institute of America, according to the report.

Notwithstanding the expansion with 1,600 employees (and growing), Lupe Tortilla has managed to maintain that family feel while providing a fun, welcoming atmosphere and high-quality culinary fare at its more than 20 locations, according to the report.
“We are very excited to open our newest location in Round Rock,” Peter Holt told the Journal. “What makes us unique is that our team has taken the time to develop systems and procedures for our amazing staff to replicate our hand-crafted dishes in each restaurant. Everything is made in-house to the same standards we started with in 1983 – every lime is hand squeezed, and every tortilla is rolled one at a time by our staff and not a machine. We’ve looked, but have never found a technology that can do a better job than a person.”
