Ashburn Area Restaurant Inspections: Violations At 27 Locations

Loudoun County's Health Department found dozens of violations during inspections at restaurants in Ashburn, Sterling, and Dulles.

ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Ashburn area from June 9 to June 16, including more than twenty restaurants with violations.

As coronavirus restrictions continue to loosen around the state, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

      • A can of steel cleaner and two containers of hand lotion were found stored with oatmeal and napkins.

      • Accumulations of food residues observed in the interiors of some rice cooking equipment.
      • The hot water plumbing at the kitchen hand sink is in poor repair.

      • Person in charge as well as any employee were not able to demonstrate how to properly set up a sanitizer bucket.
      • Employees are washing hands in bathroom as there is no working handsink in the kitchen.
      • The ONLY handsink in the kitchen is not working. Water is brown and the sink does not drain.
      • Many foods uncovered in coolers. Raw egg holding over cooked sauce, raw beef holding over vegetables and soup in multiple coolers.
      • Ice deflector has large accumulations of black mold touching ice.
      • Grilled chicken and steak are being cooked and left on counter until used without time limit.
      • Rice is being made in rice cooker and then rice cooker is unplugged at night. The rice stays in the cooker with no temperature control and is plugged back in in the morning.
      • Spring rolls are being made once every 1.5weeks. These items are not labeled with date no more than 7 days.
      • Spring rolls are being held for 9-10 days after cooking.

      • When asked, the person in charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
      • Employee food and beverages improperly stored.
      • There is no hand soap available in the kitchen hand sink.
      • Raw animal foods stored above and in close proximity to ready to eat foods in the walk in cooler.
      • Staff are not able to sanitize food contact surfaces as the quat sanitizer dispenser at the three compartment sink is not working.
      • A door gasket on the pizza prep cooler is in poor condition.
