Ashburn Restaurant Inspections: Live Roaches, Mouse Droppings

The Loudoun County Health Department found several violations during recent restaurant inspections in Sterling, Dulles, and Ashburn.

ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Ashburn area from June 23 to June 29, including a location in Dulles that had live roaches and mouse droppings.

As coronavirus restrictions continue to loosen around the state, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

  • Air Culinaire, 21750 Red Rum Dr #142 Ashburn, VA 20147
    • Date inspected: June 29
    • Total violations and corrective actions: 4
    • Violations:
      • Verifiable proof of employee health policy training not available for all food service workers present during the inspection, the forms were not available for two new employees.
      • Employee eating in the food preparation area. An employee at an active food preparation station was observed discarding a sandwich with a bite taken out of it.
      • A food service worker was observed handling soiled items such as a knife, cutting board and pot and failing to properly wash their hands after placing them in the dishwasher and moving on to the next task.
      • Fish observed thawing under refrigeration in intact reduced-oxygen packaging.
  • Potbelly Sandwich Works, 44060 Pipeline Plaza #100 Ashburn, VA 20147
    • Date inspected: June 29
    • Total violations and corrective actions: 2
    • Violations:
      • Cookie dough that is labeled to require thermal processing prior to consumption stored above ready to eat foods.
      • Wiping cloths improperly stored, the bucket was observed stored on the floor and the sanitizer tested at less than 200 ppm quat.
  • International House of Pancakes, 46931 Cedar Lake Plaza Sterling, VA 20165
    • Date inspected: June 28
    • Total violations and corrective actions: 4
    • Violations:
      • The EHS took the temperature of a chicken breast, cooked from raw, intended for a grilled chicken sandwich. The temperature of the chicken breast once plated directly from the grill was 136F.
      • Hollandaise sauce and country gravy were observed hot holding at improper temperatures (127F, 129F).
      • Containers of pre-cooked sausage links, pre-cooked scrapple, and portioned mixed cheeses were found without date labels in the far-end reach-in cooler on the line.
      • Spray bottles containing toxic materials (cleaners) were found without any identifying information/label.
  • Grill Kabob, 21100 Dulles Town Center #240 Dulles, VA 20166
    • Date inspected: June 28
    • Total violations and corrective actions: 14
    • Violations:
      • The Person in Charge has not ensured that staff are trained in food safety as it relates to their responsibilities. Staff are not monitoring food temperatures and are leaving temperature control for safety foods such as cut lettuce and cut tomato out at room temperature without a public health control.
      • When asked, the person in charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
      • A food service worker was observed washing their hands at the three compartment sink.
      • At the start of the inspection both the front and rear hand sinks were blocked, items were stored in and on the sinks.
      • No hand soap is available at the rear hand sink.
      • Two 50 pound bags of onions were observed stored on the floor. After staff relocated the bags of onions it was observed that they were stored on top of rodent droppings.
      • Raw shell eggs stored above salad. Raw ground beef stored above raw lamb.
      • In-use utensils used to handle ready to eat temperature control for safety foods such as rice are not cleaned and sanitized every four hours.
      • Potato curry reheated for hot holding observed at 123°F.
      • Foods such as spinach at 121°F, chicken curry at 98°F and potato curry at 121°F hot holding at improper temperatures.
      • Foods such as cut tomato at 64°F, cut lettuce at 65°F on the counter, and cut lettuce at 45°F in the walk in cooler cold holding at improper temperatures.
      • Hot foods are places in the walk in cooler early in the cooling process. Foods were observed cooling in 6 inch deep pans, and in plastic containers.
      • Live roaches and mouse droppings observed.
      • The rear hand sink is slow to drain.
  • Dunkin Donuts IAD D-5, 1 Saarinen Circle Sterling, VA 20166
    • Date inspected: June 23
    • Total violations and corrective actions: 2
    • Violations:
      • Handwashing facility observed with very low pressure of hot and cold water coming out of the faucet.
      • Eggs, sausages and turkey patties registered at 49°F-51°F in low boy drawer refrigeration unit. Said unit observed with lid left open and drawers constantly opened during busy rush hour.
  • United Airlines Red Carpet C-17, 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: June 23
    • Total violations and corrective actions: 3
    • Violations:
      • Dishwasher in bar area not sanitizing after wash and rinse cycle.
      • Turkey gouda warps, tomato and mozzarella cheese wrap, ham, turkey, milk, cheese and yogurt registered at 44°F to 45°F in reach in refrigerators in food prep area. Said units registered operating at 45°F.
      • Sanitizer test strips for testing quaternary ammonia not provided.
  • Riceberry Market, 22034 Shaw Rd #114 Sterling, VA 20164
    • Date inspected: June 23
    • Total violations and corrective actions: 5
    • Violations:
      • EHS observed sausage links in vacuum packaging in reach-in cooler, that had no food labels or USDA stamps. PIC explained that an employee brought in a vacuum packer machine to package the sausage links this passed Monday, 6/21/2021.
      • A date marking system is not in proper use for cooked corn and sticky rice in the refrigeration unit, (right reach-in cooler at front of kitchen).
      • The following food item(s) is observed to be unsound or adulterated: 2 arrowroots with black, white and blue spots. EHS took a picture of one of the arrowroots.
      • The handwashing facility located at the @ the front of kitchen was blocked, preventing access for employees due to a large bowl of lettuce that was sitting in the hand sink basin.
      • Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
