Ashburn Restaurant Inspections: Raw Meat, Beard Net Violations

Here are the latest health inspection results for food establishments in Ashburn.

ASHBURN, VA — Local health officials recently inspected food preparation and storage at food establishments in Ashburn. During the period from Jan. 9-23, 2020, inspectors found a total of 32 violations at 10 restaurants in Ashburn.

At the City Tap House and Ford's Fish Shack in Ashburn, an inspector found raw ground meat stored above other food. At the City Tap House, raw ground meat was being stored over cooked chicken wings. The restaurant corrected the problem by moving the raw meat to a bottom shelf, according to the inspector. At Ford's Fish Shack, raw ground meat was found stored above shellfish and fish. The restaurant's manager relocated the foods.

The inspector observed other violations at the City Tap House. Guacamole, unsalted butter, bean sprouts and garlic oil were all being held at an inappropriate temperature. The restaurant moved the food items to a walk-in cooler to rapidly cool them, while the garlic oil was discarded.

Also at the City Tap House during the Jan. 9 inspection, collard greens and tomato greens located in a walk-in cooler were dated Dec. 6 and Dec. 7, 2019, past the seven-day maximum for holding ready-to-eat foods. The restaurant discarded the greens.

At Celebrations by Rupa Vira, the inspector observed an employee who picked up food from the floor and then started cooking using the same glove. Employees are required to change gloves and wash their hands in between tasks. In another violation, an employee was observed using his bare hands to chop carrots. Bare hands should not be in contact with ready-to-eat food, according to the inspector's report. The restaurant discarded the food.

The inspector observed multiple staff at The Halal Guys not wearing beard restraints. The restaurant was told to instruct all staff to wear beard restraints when handling food or clean items.

"In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.
