ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple food storage and preparation businesses in Ashburn and Sterling from Feb. 23 to March 1, including several restaurants with violations.

Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

      • Person in charge is not ensuring foods are cooled by using proper methods and is not overseeing the dish room staff to ensure sanitizer levels are safe.
      • Improper cooling of containers of rice. Five containers of rice observed cooling in reach in coolers with lids secured. Condensation observed.
      • Quat sanitizer at 3 comp sink above 500ppm. Quat sanitizer at bucket above 500ppm.

    • Inspected: Feb. 25
    • Total violations and corrective actions: 6
    • Violations:
      • No handsoap at the hand sink next to the three basin sink.
      • A container of raw eggs was found stored above a container of ready-to-eat tofu.
      • The facility is not sanitizing dished, equipment, utensils, and food contact surfaces after washing/rinsing.
      • Several food items kept longer than 24 hours do not have date marks.
      • Spray bottles of sanitizer that did not have labels were found in the kitchen.
      • Single-use articles were observed being washed for re-use.

    • Inspected: Feb. 25

    • Violations:
      • A container of deli ham in the front cooler does not have a date label.
      • A spray bottle containing a cleaning agent was found without a label.
      • Utensils at the coffee bar were observed in a dipper well that was full of stagnant water.
      • Test strips for the sanitizer at the three basin sink are compromised and are not accurately measuring the concentration of the sanitizer. Also, there are no test strips to measure the concentration of the Veggie wash (provided by ECOLAB).
      • The deflector on the ice machine in the back area was observed with soil residue.

      • The internal temperature of cooled chicken at stove was 78 F, bee was 84 F while stored next to stove
      • Raw shell eggs were observed stored at room temperature to be used when ordered without any time control or markings when food should be discarded.

    • Violations:
      • Raw chicken observed placed over broccoli in reach in refrigerator.
      • Faucet for cold water in hand sink next to the three compartment sink observed broken.
  • Little Caesars, 22405 Enterprise Street #101 101 Sterling, VA 20164
    • Inspected: Feb. 26
    • Total violations and corrective actions: 2
    • Violations:
      • Facility has no clean up plan for vomitus and diarrheal incidents.
      • Employee observed washing hands at 3 compartment sink and did not use soap. Employee then walked to hand sink to get paper towel to dry hands.
