Leesburg Restaurant Inspections: 10 Violations At 1 Location
The Loudoun County Health Department conducted inspections at several restaurants in the area, including Moe's and The Salt Pot Kitchen.
LEESBURG, VA — Officials from the Loudoun County Health Department inspected multiple food storage and preparation businesses across the area from May 5 to May 11, including five locations with violations.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.
- The Salt Pot Kitchen, 1602 Village Market Blvd Leesburg, VA 20175
- Date inspected: May 7
- Total violations and corrective actions: 2
- Violations:
- Cauliflower soup noted as not being adequately cooled to prevent the growth of harmful bacteria. Parts of the soup temping at 45F.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.

- Food employees are not informed of their responsibility to report to the person in charge information concerning their health and activities as they relate to diseases transmitted through food.
- Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
- Exterior door not tight fitting.
- Refrigerator in disrepair. Griddle top observed with rust.
- Hood in disrepair. Faucets to sink and sink to wall junctures not properly sealed.
- Insufficient lighting above 3 comp sink and food preparation areas.

- Interior of doors not non-absorbent. Sink to wall section not observed with proper caulking.

- Insufficient lighting above 3 comp sin and food preparation areas.
- Moe's Southwestern Grill #282, 667 Potomac Station Dr, Leesburg

- Violations:
- Observed the person-in charge did not have active managerial control. Upon arrival, no person-in-charge was identified when asked multiple times by EHS. The PIC did not maintain daily over sight of food temperatures, sanitation of equipment or cleaning of food contact surfaces.
- Observed no paper towels at the hand washing sink by the prep sink.
- The following food contact surfaces were observed not clean to site and touch: salute pan, salsa blender, metal plastic food container, hold metal spatula, plastic storage container for sauces.
- The following food contact surfaces were observed not sanitized, only washed and rinsed: plastic food containers and metal containers. EHS asked PIC on duty to re-sanitized and employee did not submerge plastic or metal food containers. EHS tested liquid that was left on food contact surfaces, that was recently put on drying rack. Quat test strip was at 0 ppm.
- Observed improper reheating for hot holding of white chicken that was on the hot holding line. The white chicken was reheated on the flat top grill for a few seconds and EHS tempted the white chicken at 128F after PIC put the food item back on the line.
- The following food items were observed improperly hot holding at the locations of the line and hot box: white chicken 132F, Pinto beans 130F, Ground beef 124F, Pinto Beans at hot box 131F.
- Observed the following food items improperly cold holding: sour cream in container at grab and go 42F, Tamale sauce (green sauce) in containers at grab and go 44F, Cut romaine lettuce on line 47F, Shredded lettuce 44F at low boy.
- Observed no probe temperature measuring device that was readily accessible for use to ensure proper temperature during hours of operations. EHS observed infrared temperature device being carried around and used to measure temperatures. Infrared temperature device was left at hot holding line area after employees were done using device. EHS asked PIC about where the probe temperature measuring device was and PIC ran to the manager's office to grab a new probe temperature device that was in unopened original packaging. PIC attempted to calibrate probe temperature measuring device, with ice bath. EHS never observed PIC using probe temperature measuring device after ice bath.
- Observed flies in the back of the kitchen by 3 basin sink.
- Observed 3 basin sink's waste water plumbing in disrepair with duck tape around the one pipe for far right basin. EHS took pictures of the disrepair. Strong odor was observed around the 3 basin sink. Waste water going into waste water piping was observed standing on the floor due to piping in poor repair. See pictures.
