Leesburg Restaurant Inspections: Violations At 7 Locations
The Loudoun County Health Department found violations at 7 locations around Leesburg during routine restaurant inspections
LEESBURG, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Leesburg area from June 17 to June 22, including three restaurants that amassed a total of 11 violations.
As coronavirus restrictions continue to loosen around the state, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Observed several uncovered containers in refrigeration units.
- Observed cooked pork an cooked tongue not properly cooled. Food was cooked and placed in refrigeration one day ago.
- Observed foods in prep unit above 41F.
- Observed several wet wiping cloths on surfaces throughout the kitchen.
- Observed several refrigeration units interior in need of cleaning.

- EHS observed the following ready to eat food items stored in a sandwich style prep cooler under raw chicken and raw shrimp: leafy greens in a container, a whole green and red pepper and cut pineapple in a container.
- EHS observed one employee rinse off metal and plastic food containers and hand those food containers to another employee, who then wiped the food containers off before storing them on a clean drying shelf.
- EHS observed cutting board with wood surface that does not have a finish on the wood cutting surface. Wood is exposed to food on this cutting surface.

- The handwashing facility located at the cooking kiosk is blocked, preventing access by employees for easy handwashing.
- No parasite destruction records maintained for raw, raw marinated, partially cooked or marinated-partially cooked fish (salmon and tuna) that are served or sold in ready-to-eat form.
- Raw chicken stored over raw shell eggs, fish and shrimp in the reach in cooler.
- Cooked pork and chicken cold holding at improper temperatures in the low boy cooler. The PIC explained that they had been out on the counter for the lunch rush
- Croquettes date marked 6/15/2021 indicating that they were held past 7 days. PIC explained that they were made on 6/15/21 and then frozen the same day and pulled out of the freezer on 6/23/2021.
- Reduced oxygen packaged fish and chicken observed in the facility. PIC explained that it came from the facility's sister restaurant in DC.

- Employee observed handling raw ground beef with gloves then changed gloves without washing hands.
- Employee observed handling raw ground beef patty while wearing gloves, then grabbed the tongs with same gloves. Employee then put on clean gloves to handle ready to eat food. Employee then handled the tongs which was handled with the gloves that had raw hamburger then the employee went back to handle ready to eat food (buns) with the dirty gloves.
- Several temperature control for food safety (TCS) food items, cut tomatoes, sliced turkey, egg salad, were observed cold holding in prep coolers above 41 F.
- Kitchen is using a high temp dish machine to clean and sanitize food utensils but has no way to verify the food utensils are getting hot enough to sanitize.

- Employee was observed rinsing off dirty dishes the proceeded to handle clean food utensils as they came out of the dish machine.
- Shellstock tags could not be found for shellstock that was sold last month.
- The chlorine sanitizing solution was tested on food utensils as they came out of the dish machine and 0 ppm was observed on test strip.
- Deli turkey, raw salmon, and house made slaw were observed with internal temperature of 45 F while cold holding at walk-in cooler.
