Loudoun Restaurant Inspections: Violations At Two Schools

The Loudoun County Health Department inspected several restaurants and found violations at two Loudoun County schools.

LOUDOUN COUNTY, VA — Officials from the Loudoun County Health Department inspected multiple food storage and preparation businesses across the county from March 10 to March 16, including two schools with violations.

Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Robek's Fresh Juices and Smoothies, 21012 Southbank St Sterling, VA 20165
    • Date inspected: March 15
    • Total violations and corrective actions: 3
    • Violations:
      • The facility does not have verifiable means of an employee health reporting policy.
      • The facility does not have a policy or procedure set in place to properly address the cleanup of vomit or diarrheal events.
      • A spray bottle containing water that was being housed with chemicals was not labeled.
  • Cafesano Restaurant, 21305 Windmill Parc Dr #130 Sterling, VA 20166
    • Date inspected: March 15
    • Total violations and corrective actions: 3
    • Violations:
      • Employee observed handling dirty dishes then proceeded to handle clean food utensils while wearing same gloves.
      • Raw shell eggs were observed stored over Tzatzki and lemons while stored in walk-in cooler.
      • Several containers of cleaners were observed on shelving over clean dish tray.
  • IHOP, 44030 Pipeline Plaza Ashburn, VA 20147
    • Date inspected: March 12
    • Total violations and corrective actions: 2
    • Violations:
      • Raw ground beef patty was observed stored over cut cheese and mushrooms while stored in reach-in cooler.
      • Employee running dish machine checked the chlorine sanitizer concentration after i ask him too. The chlorine sanitizer concentration was 0-10 ppm.
  • Sterling Elementary School, 200 Church Road West Sterling, VA 20164
    • Date inspected: March 12
    • Total violations and corrective actions: 1
    • Violations:
      • High temperature dishwasher observed leaking.
  • Agni Indian Cuisine, 46005 Regal Plaza #140 Sterling, VA 20165
    • Date inspected: March 11
    • Total violations and corrective actions: 7
    • Violations:
      • This food establishment does not have an employee, with management and supervisory responsibility, that is a Certified Food Protection Manager.
      • A food employee was observed washing their hands at the three compartment sink.
      • The dish machine is not properly dispensing sanitizer. 0ppm Sanitizer detected when tested. Wares are not being sanitized after washing.
      • Several food contact surfaces observed with dried on food debris. (pots, pans, utensils and interior of the ice machine)
      • The person in charge could not provide a food temperature measuring device.
      • There is an oscillating fan on the wall next to the prep cooler (open food) on the line that is very visibly dirty with dust and debris built up on the fan grate.
      • Facility does not have a sanitizer test kit to test the sanitizer concentration at the dish machine.

      • Raw chicken holding over ready to eat (RTE) lettuce in prep cooler. Food uncovered allowing possible cross contamination.
      • Chicken in front on ice is not holding at proper cold holding temperatures.
  • Los Tios Grill Restaurant, 201- A Harrison St Se Leesburg, VA 20175
    • Date inspected: March 16
    • Total violations and corrective actions: 1
    • Violations:
      • Proper cooling methods not being conducted. Condensation observed on lids of pinto beans, with temperature above 41F. Also temperature of salsa above 41F.
  • Shalimar Charcoal Kabob Inc, 46000 Old Ox Road #108 Sterling, VA 20166
    • Date inspected: March 16
    • Total violations and corrective actions: 4
    • Violations:
      • Employee was observed washing and rinsing skews and not sanitizing prior to preparing to re-use.
      • Chicken kabobs were observed re-heated to 126-190 F.
      • Chicken on the buffet was observed with an internal temperatures of 130 F.
      • Beef curry and lentils were observed stored with an internal temperature of 42F.
  • Potbelly Sandwich Works, 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: March 16
    • Total violations and corrective actions: 2
    • Violations:
      • Meatballs registered at 129°F in hot holding unit.
      • Cut lettuce, chicken salad and cut tomatoes registered at 47°F in low boy refrigerator. Said unit registered operating at 47°F.
  • Potomac Falls High School, 46400 Algonkian Parkway Sterling, VA 20165
    • Date inspected: March 16
    • Total violations and corrective actions: 1
    • Violations:
      • The wares are not getting sanitized through the high temperature dish machine due to utensil surface temperatures not reading a minimum of 160F. Utensil temp observed at 153-154F.
  • Subway, 21950 Cascades Parkway Sterling, VA 20165
    • Date inspected: March 15
    • Total violations and corrective actions: 2
    • Violations:
      • The facility does have an Employee Health Reporting Policy, but not all employees have signed it. An employee working had not signed the document.
      • Egg patties being held on the front line were tempted at 51-53F that were put out that morning.
