Enhance Your Summer Salads With a Homemade Strawberry Vinaigrette
DC Central Kitchen chef shares his recipe for a vinaigrette with one of summer's favorite fruit.
Strawberry picking season is still going on in Northern Virginia and with the warm weather here, there is nothing like a good salad.
Saturday at the Falls Church Farmer’s Market Chef Series, Edward Kwitowski, director of school food services for D.C. Central Kitchen, shared his strawberry vinaigrette recipe with those in attendance. Kwitowski, a chef for the last 15 years, said the recipe just came to him this year.
“I thought about something that would tie in with strawberries,” he said.

Here is Kwitowski’s strawberry vinaigrette recipe:
¼ cup of raspberry vinegar

A pinch of ground coriander
¼ cup of strawberry puree
½ cup of blended oil
A teaspoon of honey
¼ teaspoon of lemon zest and salt to taste
In a large bowl, add raspberry vinegar, coriander, lemon zest, honey and strawberry puree. Whisk in blended oil in a slow stream until emulsified. You can adjust the seasoning to taste.
