'Large Number Of Fruit Flies' | Reston/Herndon Inspections

RESTON/HERNDON, VA — Fairfax County regularly conducts inspections of Reston and Herndon restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including a "large number of fruit flies" at China King in Herndon -- from Feb. 21-28, the most recent dates available.

Critical violation: Observation (CORRECTED DURING INSPECTION): The following food item(s) for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control: 1. Garlic spread mixed with liquid margarine observed sitting out at room temperature. Garlic mixture is supposed to remain refrigerated according to manufacturer's specifications.
Critical violation: Observation (CORRECTED DURING INSPECTION): The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours: 1. Cooked cabbage observed inside the walk-in refrigerator at temperatures between 59f-74f after more than 2 hours. Some pieces were in compliance while others were not.

Critical violation: Observation (CORRECTED DURING INSPECTION): Unwrapped or uncovered food in the following location where the food is subject to contamination: crispy wonton strips in large bins are stored uncovered in dry storage area in the presence of fruit flies.
Critical violation: Observation (CORRECTED DURING INSPECTION): The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: fried rice at wok line.
Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): fried rice and onion, carrot, and pea mix.
Critical violation: Observation (CORRECTED DURING INSPECTION): Restricted, commercial use pesticides present in the facility are applied by the operator who is not a certified pesticide applicator. Cans of raid in dry storage and by ice bin.
Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Dispensing and/or in-use utensils improperly stored between use as follows: scoop handles stored in dry good bins (rice, flour, salt, sugar, etc) with handles in food.
Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Wiping cloths improperly used for the following activity: covering egg rolls in cooler.
Non-critical violation: Observation (REPEAT): The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: cooler doors (inside and out) and shelving in coolers.

Non-critical violation: Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. OBSERVED ONIONS, RICE AND GINGER STORED ON THE FLOOR.
Non-critical violation: Observation (REPEAT): The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: OBSERVED CARDBOARD LINING COOKTOP, PREP TABLES AND STORAGE SHELVES; WOOD USED TO REPAIR A PORTION OF THE WALK-IN-COOLER FLOOR.
