Simma's In Wauwatosa Is 2017 Bakery Operation of the Year
The Wisconsin Bakers Association chose a Wauwatosa bakery as its 2017 winner.

WAUWATOSA, WI — Simma's Bakery of Wauwatosa beat out five other Wisconsin bakeries for the 2017 Bakery Operation of the Year (BOY) award from the Wisconsin Bakers Association (WBA).
The award was presented March 13 during the WBA's Awards & Appetizers Networking Evening, held during the Midwest Foodservice Expo. Past winners of the award voted to name Simma's this years' winner and the recipient remained a secret until the name was revealed.
According to a press release from the WBA, owners Mark and Peggy Carollo purchased Simma's Bakery in 2011 after opening Croissant Etc., a wholesale bakery in Glendale, which they continue to operate today. All three of their children have worked at their bakeries over the years, with their oldest daughter working full-time at Simma's. They have been members of the WBA since 2016.

In their nomination, they wrote, “We hope to continue to build on the reputation that Simma’s has developed over the last 32 years and our decision to purchase our building and double the size of our bakery during our recent expansion hopefully shows the community our commitment to continue to serve the Wauwatosa and surrounding areas.”
The bakery's signature classic cheesecake helped snag them the award, in addition to their popular wedding cakes, pasties, conventional cakes, and famous morning buns.

The Bakery Operation of the Year award was created back in 2001 to recognize an outstanding bakery
operation annually. This year’s BOY award was sponsored by Valley Bakers Cooperative Association.
