Did you know: making small changes incrementally to your diet is a simple and affordable way to make an impact in reducing greenhouse gas emissions and boost your health? You can join a local “Meatless May” challenge: pledge to choose more fruits, veggies, whole grains, and legumes while moving meat and dairy products to the side, or off your plate entirely. If this is new, try going meatless one day a week. If you're already eating less meat, try some additional days! The idea is to eat more plants at a level that feels achievable to you. The challenge is hosted by environmental nonprofit Acterra — for free, they will provide weekly themes, in-season recipes, healthy tips, and even an experienced "buddy" who can guide you through your questions, menu planning, and grocery lists, if you request support.
