Lucky Taco Hiring For February/March Opening In Vernon

VERNON, CT — The owners of Lucky Taco are targeting a springtime opening at the latest for their expansion into Vernon and and have begun the hiring process to fill the staff.

Lucky Taco co-owner Erin Emmons said Friday the restaurant is looking for line cooks for the new 81 East St. location. She said anyone interested can send resumes to getluckytacos@gmail.com for "immediate consideration."

The expected opening will be mid-February to early March, she said.

Erin and David Emmons announced they were expanding into Vernon in November. Lucky Taco will occupy the space in a strip plaza one occupied by Nature's Grocer at the intersection of routes 30 and 31 and East Street.

Vernon Economic Development Coordinator Shaun Gately said he has had many conversations with the Both David and Erin Emmons over the years while trying to find a suitable local landing spot for the restaurant.

He joked that Lucky Taco was always "the one that got away" until now.

Lucky Taco's Manchester restaurant is located at 829 Main St., on the corner of Main Street and Purnell Place.
