Slow-Moving Hiring Process Stalling Lucky Taco's Vernon Opening

The owners of the Lucky Taco restaurant have issued a call-out for staffers in their efforts to open in Vernon.

VERNON, CT — The owners of a popular Tex-Mex Restaurant that is adding a Vernon location to its Manchester base said this week that a slow hiring process is delaying plans to open.

So the bottom line is — Lucky Taco is hiring.

"We know this is a nationwide issue and all industries are facing it," owners owners Erin and David Emmons told Patch this week with a follow-up statement that they hope to be open in late July.

In a call-out to area residents, the Lucky Taco owners said that the kitchen staff — particularly cooks — needs to be addressed first. Then, the waitstaff and cashiers can be hired, the owners said.

Once renovated, the space at 81 East Street near the intersection of Routes 30 and 31 will be the Vernon home of the Lucky Taco.

That's the site of the former Nature's Grocer bstore.

Vernon Economic Development Coordinator Shaun Gately said he has had many conversations with the both David and Erin Emmons over the years while trying to find a suitable local landing spot for the restaurant.

Lucky Taco's Manchester restaurant is located at 829 main St., on the corner of Main Street and Purnell Place.

According to its profile, "Lucky Taco is a sweet Main Street spot serving unique and flavorful gourmet tacos. Chef David Emmons bends the idea of the traditional Tex-Mex taco into a fresh and delicious creation."

Lucky Taco also features a tap room.
