• Warewashing machine with build up and must be kept clean. Observed 3 compartment sink with grease build up and must be kept clean.
• Observed build up between and behind equipment and must keep restaurant clean.
• Observed build up on the ceiling tile above the serving line and must keep vent system and ceiling clean.

• Wiping cloth sanitizer at 0 ppm and must use 100 ppm of chlorine or 200 ppm of Quat sanitizer. Must ensure sanitizing solutions has proper amount of sanitizer at all time, and change whenever necessary.
• Observed live flies in store. Must take necessary steps to eliminate flies.
