Know Before You Go: Flies In Kitchen, Employee Did Not Wash Hands

The Cherokee County Environmental Health Department visited the following establishments to conduct food service inspections June 3-10:

  • Observed stew, cooked from the day before, at a improper temperature of 58 degrees F. The manager must ensure that potentially hazardous food cools from 135 degrees F. to 41 degrees F. in 6 hours. The manager corrected and discarded stew.
  • water knob not provided/shut off at employee handwash sink. The manager must repair water knobs.

  • Observed employee use oversized, rubber gloves for stirring raw chicken, rinse in meat sink and store as clean. PIC instructed that gloves must be washed rinsed and sanitized (commercial, thick gloves). PIC properly cleaned and sanitized gloves.
  • Observed dried food residue in meat prep sink. Employee properly cleaned and sanitized sink on request.
  • Time as control implied for food not held at proper temperature on buffet and hibachi station, however, times were not marked on products. Out of temp items were discarded and replacement items were properly marked w/times.

  • Observed slicer and can opener with build up and must be kept clean.
  • Observed build up on cooler gaskets and other non-food contact surfaces. The manager must keep equipment clean.
  • Observed grease build up on floor and counters and must keep restaurant clean.

  • Observed old labels stuck to food containers after cleaning. Must remove labels to prevent contamination.
  • Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. Manager must ensure that all coolers maintain the proper temperatures.
  • Observed the washed and clean food containers were not properly air-dried before storing. All wash and sanitized food container must be air dry before stacking.
  • Reach-in cooler not cleaned to prevent accumulation of soiled residue, also there were several of the cooler’s gaskets were in poor repair.
  • Observed the floor tiles in the kitchen were broken. All physical facilities shall be maintain in good repair.
  • The hood ventilation system must be kept clean, as evidenced by the grease accumulation
  • Observed live flies in kitchen. Door and windows to food preparation area has no screening or air curtain.
