Know Before You Go: Insects In Kitchen, Chemicals Stored Near Food

The Cherokee County Environmental Health Department visited the following establishments to conduct food service inspections May 27-June 3:

• Observed ventilation hood lights are missing the proper shields and lights. Must ensure all lights have the proper shields to prevent cross-contamination.

• Must post current inspection, food service permit and CFSM in full view of the customers.
• Observed gasket broken in reach in cooler. The manager must ensure that all equipment is in good repair.
• Observed equipment in poor repair, as evidenced by water leaking on the floor of the kitchen.
• Observed small flying insects in the kitchen area.

• Sink sanitizer at “0” ppm cl. Hydrogen peroxide ‘sanitizer’ product being dispensed. Switched product for chlorine sanitizer, but dispensing system not working properly. Chlorine was manually added to sink and set to 50 ppm cl. Repeat violation.
• Chicken wings in reach in unit (deep container) at 50°F in center. Product was cooked more than 12 hours prior and was discarded. Product must cool from 135°-70°F in 2 hours and to 41° in an additional 4 hours.
