The Cherokee County Environmental Health Department conducted food service inspections Nov. 29 through Dec. 6 at the following establishments:

View inspections: November 30, 2017 Score: 81, Grade: B
- Keep ice shield in ice machines clean and free of mold.
- Dish machine not providing a sanitized dish. Repaired to 167.2 degrees F plate level.
- Wipe cloth solution must be kept at proper sanitization level. Corrected to 200ppm Quat.
- All potentially hazardous foods must be cold held at 41 degrees F or less.
- All potentially hazardous foods must be hot held at 135 degrees F or more.
- Do not wet stack pans, etc.
- Repair pressure gauge on dish machine.
- Must have waterproof maximum registering thermometer for dish machine.
- Refinish walls at dish machine and 3 compartment sink. Keep ceiling tiles around vents clean.
- Replace missing collection trays and pans under hood.
- Roaches seen in chemical storage/utensil storage area.

- Person-in-charge (PIC) is not managing kitchen operations and is not demonstrating knowledge at a level to ensure safe food operation. PIC must have adequate knowledge to manage food operation.
- Observed containers of raw chicken and raw shrimp sitting on edge of floor level mop sink. Food products transferred to clean containers and containers taken to dish area. Do not place food items on mop sink.
- Interiors of bulk product containers heavily soiled with food debris; interior of microwave coated in thick layer of food spillage; interior of prep cooler also had layer of food grime. Food contact surfaces of equipment must be maintained clean. These items must be cleaned at end of business day.
- Prep top salad unit: egg roll at 68°F; wonton at 67°F; lettuce at 57°; chicken at 62°F. Cold, Time/Temp for Safety (TCS) foods in cold storage must be held at 41°F and below. Items were discarded. Corrected On-Site.
- Heavy grease accumulation around fryers and cook line must be cleaned.
- Floors under equipment throughout kitchen must be cleaned; mop sink area must be cleaned.
- Damaged tiles in various areas must be repaired; screen at backdoor in disrepair and must be repaired.
- Remarks: Do not use prep top unit beside ice machine for cold food storage.
- A follow-up inspection will be held, but no date was provided on the form.
