• Observed moldy onions in the walk-in cooler. Advised PIC that moldy food items are not allowed in the facility and must be discarded. Food was discarded immediately, corrected on site.
• Observed an uncovered container of pre-cooked chicken wings in the reach in cooler of the prep top cooler (within the front food service). Food must be protected from cross contamination by storing the food in packages, covered containers, or wrappings. Corrected On-Site.
• Observed buildup of mold in the ice machine during the time of the inspection. Advised the PIC that the ice machine must be cleaned frequently enough to prevent the buildup of mold within the unit. Unit was taken offline to be cleaned immediately, corrected on site.
• Observed several nonfood contact surfaces with heavy food debris (reach in coolers, freezers, etc.) Advised PIC that all surfaces must be cleaned frequently enough to prevent the build up of accumulations.

• Observed milk stored in the walk-in cooler with an expiration date of 07/31/2018. Advised PIC that expired foods are not allowed in the kitchen and must be thrown out. Milk was immediately discarded.
