Not Your Father's Root Beer Creator Opens Cary Brewery
Not Your Father's root beer creators are excited for the Jan. 10 grand opening of Spirit Water brewery in Cary.
CARY, IL — The official grand opening of the new Cary brewery Spirit Water is Friday, Jan. 10, according to the brewery, distillery and taproom's Facebook page. Tim Kovac, brew master, founder and owner of the brand formerly known as Small Town Brewery, is inviting the public out to his new brewery, which is located at 3300 Three Oaks Road.
You might even recognize Kovac and Small Town Brewery thanks to Not Your Father's Root Beer, and the brewery's many other alcoholic beverages that followed, according to the Spirit Water website.
Kovac founded Small Town Brewery in Wauconda in 2011, changing the beer industry by using an inspiration of his — a gruit (German for "herbs") method of brewing, according to the Spirit Water website.

"Tim already changed the Beer industry and now he is ready to change the hard liquor industry as well," the website states. The "original flavored craft brewer" and partners have created a new beer brand called Iconic.
The Cary-Grove Area Chamber of Commerce will host the brewery's official ribbon cutting Friday.
