Ice Cream, Coffee Shop Opening In Lemont

The shop will offer Colectivo Coffee and Capinnari ice cream, including lattes, espresso, cappuccinos, cold brew, milkshakes and sundaes.

LEMONT, IL — Lemont's newest business will be opening their doors Thursday. Honey Pedals, a coffee and ice cream shop, will open at 400 E. Illinois St., in the former Muffins location, to offer some sweet treats to customers.

The new shop is owned by Monica Chiarello and Allen Davidson.

"We saw a need for what we had," Chiarello told Patch. "It just worked out perfectly, we love the downtown area."

While the two did not imagine they'd be opening their business in the middle of a pandemic, they have already adapted their business model to follow social distancing and safety guidelines. There are several ways you can order from Honey Pedals, including: going to the walk-up window on Stephen Street, park in the designated curbside area on Stephen Street and call in your order to 331-318-7967; or you could come inside to place your order (only four customers inside at a time).

"I think one of the biggest feelings we have had is not being able to open our business the way we envisioned it," the two told Patch. "We won't get to have a grand opening with our family and friends. We won't be able to have those human interactions the way we envisioned people experiencing our shop."

The shop will offer Colectivo Coffee and Capinnari ice cream, including lattes, espresso, cappuccinos, cold brew, milkshakes, sundaes, teas, baked goods and hand-dipped ice cream.

Chiarello said her and Davidson have not hired any other employees. It will be just the two of them working in the shop, and the store is cleaned and sanitized every day.

"We're going 150 percent, above and beyond," Chiarello said.

So far, over 40 of Lemont's small local businesses have filled out Patch's simple online survey to let everyone know they are open and their current hours of operations during the coronavirus outbreak.
