A new food truck is driving plant-based, healthy eating on campus at Tulane University.

A new food truck is driving plant-based, healthy eating on campus at Tulane University.

Bowlful, the food truck concept by Tulane Dining, features an innovative vegan and vegetarian grain-bowl menu and a variety of flavor profiles.

According to Good Food Initiative, 65 percent of US consumers are omnivores, 29 percent are flexitarians, and 6 percent are vegan/vegetarian.

“We knew that a plant-based food truck would attract more than just vegans and vegetarians,” said Kelsey Rosenbaum, MS, RD, LDN, Regional Campus Dietitian. “Our goal was to create great food that everyone could enjoy.”

The offerings include an Indian Grain Bowl with Baingan bharta, garam masala lentils, cauliflower, chard, okra, pickled vegetables, taro chips, and harissa cilantro lime yogurt; a Super Food Grain Bowl with baba ganoush, wild rice with roasted beets, sweet potatoes, brussels sprouts, kale, pepitas, and champagne vinaigrette; and a Summer Grain Bowl with hummus, berbere vegetable couscous salad with radishes, snow peas, roasted squash, mushrooms, almonds, and chermoula sauce.

"I love eating at Bowlful. I try to eat vegetarian meals when on campus, and with Bowlful, I feel like I'm getting a healthy, balanced plant-based meal,” said Tulane junior Alexander Thomas.
