South End's Bissonnette Offers Cooking Demonstration

Coppa and Toro Head Chef Jamie Bissonnette will be offering a free demonstration at Trident Booksellers in Back Bay.

If there's one thing we know about Head Chef Jamie Bissonnette, it's that he loves meat.

Step into , his newest South End restaurant ( on Washington Street is another popular Bissonnette destination) and you'll find a menu chock full of items made from unusual cuts of meat (Bissonnette is known for his all-part-of-the-pig approach to cooking). Fried pig's head terrine, anyone?

This Thursday, Trident Booksellers is hosting Bissonnette at its Back Bay shop for a cooking demonstration in honor of the new cookbook Primal Cuts: Cooking with America's Best Butchers, in which Bissonnette is featured.
