New Mexican-Inspired Restaurant To Replace Sol On Route 22
Cinco de Mayo will be Sol Mexican Cantina's last fiesta before the Branchburg restaurant is completely transformed into a new one.
BRANCHBURG, NJ — The popular Branchburg restaurant Sol Mexican Cantina is holding its last fiesta on Cinco de Mayo before completely revamping itself into a new Mexican-inspired restaurant.
Sol at 3366 Route 22 in Branchburg had previously closed due to the coronavirus pandemic last year. On Wednesday the restaurant is reopening for one day only from noon to 9 p.m. to celebrate Cinco de Mayo.
Specialty Mexican dishes and drinks will be served throughout Wednesday. Then beginning on Thursday, the restaurant will reopen as Mexicali Brews with the same owner, new chef and new menu, said Rodrigo Castillo, the restaurant manager.

The new menu will offer Mexican-inspired dishes including tacos, rice bowls, salads, fajitas, burritos, enchiladas and more. Craft beers and sangria will also be served as well.
