Getting the Cheesey Blues in Red Bank

Cheese Cave has a new blue cheese blend.

You could say that there's a new big cheese in town, and it's got the blues, in a manner of speaking — or tasting.

Red Bank's Cheese Cave, according to its Facebook page, has recently brought in a new blue, called Ziege Zacke Blue. It's pronounced "ziggy zack," and, according to the Cave's post, it tastes a bit like the way it sounds.

In German, the post says, the name of the cheese actually means "goat cheese with a wave of blue," the post says.

It's a dry, Jack-style cheese, it adds, and is "cave aged, yielding a creamy texture with a slight tang at the front, sweetness on the finish, and rich, earthy notes." This blend comes from Roelli Cheese Co., Inc. and LaClare Farms, of Wisonsin.

Ziege Zacke Blue is a cow/goat milk blend, the LaClare Farms website says. Dubbed a "great introductory blue cheese," it is recommended for use wherever Jack or blue cheeses are normally used — cheese boards, crumbled over dishes. 

The cheese is ripened for a minimum of three months and has a shelf life of a year.

Management also posted that Evalan cheese is back in stock again at the store.
