The restaurant, at 14a Railroad Ave., had a soft opening this week to introduce diners to their unique version of ramen on offer.

Instead of soy sauce, their bowls are based on "coconut aminos, which do not contain any soy, wheat or gluten products and contain about 70% less sodium," according to the restaurant's website. There is also an emphasis on filtered water, fresh ingredients and the use of Himalayan salt.
