Recipe For Fresh Flavor At A Hudson Valley Farmer's Market
Here's a recipe that takes advantage of the fresh farm produce found at nearby farmer's markets.

MID HUDSON VALLEY, NY—Summer's here so why not make the most of the fresh delicious produce available at the nearest farmer's market. With some tomatoes, cucumbers and basil you can blend up a tasty gazpacho and a handful of greens makes for a veggie-rich frittata. For a simple side dish, slice up fresh mozzarella with some succulent market tomatoes.
For brunch or a light lunch try this Braised Chard Frittata created by Chef Karen Symington Muendell for Down To Earth Markets. You'll need a bunch of chard, garlic, fresh grated horseradish, Gruyere cheese, olive oil, red wine, butter, some farm fresh eggs and some chopped nuts.
Remove stems from chard, tear leaves into small pieces and wash. In a skillet, heat enough olive oil to just coat bottom. Add the garlic, cook one minute. Add chard and cook 3 minutes at medium heat, stirring. Add the wine, raise heat and cook until wine is evaporated. Season with salt and pepper. In another skillet, heat butter. Stir horseradish into eggs. Pour 1/3 of the egg into the skillet, add braised chard, then pour in remaining egg. Cook until just set, flip. Spread cheese on top, cook until slightly melted. Remove from heat, scatter nuts on top, slice and serve.
