Father/Son Duo Launches New Eatery In Montauk

Pre-bottled cocktails offered at Flagship serve eight guests.

MONTAUK, NY — Just after Father's Day, a father and son team are announcing a joint venture that means they'll be spending plenty of time together making delicious memories.

Flagship, Montauk’s new local seafood eatery, which also features craft cocktails, launched in June, with father and son duo of Chef Eric Miller and Adam Miller at the helm.

It's familiar terrain for the culinary pair: The two are also behind East Hampton's Bay Kitchen Bar.

Chef Eric, a pioneering proponent of the Slow Food, dock-to-dish and farm-to-table movements, has created a menu offering shareable small plates, crudos and a raw bar, as well as locally-sourced seafood, meat and poultry entrees, the release said.

Mixologist Adam brings a "full-fledged seasonal cocktail program to Montauk, with house-made ingredients, proper ice and a well-trained bar staff," the release said.

The restaurant is located on the docks at 466 West Lake Drive and is open for the season through November, 2017.

“We are committed to making Flagship an exemplar of everything that is fresh and local on the East End,” says Chef Eric, a long-time advocate of the region’s bounty. “I am also delighted to partner again with my son, Adam, who is taking the craft of the cocktail to new heights in Montauk.”

With entrees priced between $12 and $18, the dishes are designed to be shared. Offerings from the launch menu include:

  • Torched Fatty Bass Crudo, Vinegared Corn & Shallot Relish
  • Local Fluke & Charred Squid Crudo, Passion Fruit
  • Octopus Plancha, Chick-Peas, Heirloom Tomato
  • Lobster Spring Roll, Summer Vegetable Salad & Nuoc Mam
  • Seared Day Boat Scallops, Whole Grain Vegetable Salad & Pomegranate Glaze
  • Crusted Local Catch Yellowfin Tuna, Roasted Carrots, Soba Noodles & Dashi Broth
  • Smoked Pork Ribs, Sweet Potato, Honey Glaze
  • Imperial Aged Burger, Smoked Bacon, Crisp Shallots, Fondue & Fried Duck Egg
  • Aged Prime Sirloin Steak, Gold Potato, Celery Root, Caramel Onions & Mushrooms

Cocktails with a twist

The cocktail menu is sure to delight, father and son said.

“We are bringing advanced cocktail culture to Montauk with top quality spirits, house-made syrups and cordials using the locally harvested ingredients,” Adam said. “Our drinks marry elements of familiar cocktails, like the margarita, daiquiri, Kir Royale, pisco sour and caipirinha, with my own twists that will surprise and delight our guests.

Also, instead of a bottle of vodka with an ordinary mixer, Flagship offers straight-from-the-freezer, 750 ml. pre-bottled cocktails, including the Negroni, El Presidente, Manhattan, Boulevardier, Vesper, Vieux Carré, Bamboo and the Martini — and they serve eight guests.

Flagship’s wine list features bottlings from Long Island and around the world. They are featured at three price points: $50, $70 and $120. Every $50 bottle is also poured by the glass. One popular option for summer is rosé on tap at $10 a glass.

Flagship is located directly on the docks at 466 West Lake Drive.

From May to June, Flagship is open Wednesday to Sunday, 4 p.m. to 2 a.m., with a full menu until 11 p.m. and bar snacks until closing. From July to November, Flagship will be open seven days a week from noon to 2 a.m., with the same kitchen hours.
