Banty Rooster Opens In W Village With Southwestern Flavors
The Banty Rooster opens Wednesday at 24 Greenwich Ave.
WEST VILLAGE, NY — A Southwestern flavors-inspired restaurant from hospitality veteran Delores Tronco-DePierro opens in the heart of the West Village on Wednesday.
The Banty Rooster draws on Tronco-DePierro's life in the southwest, bringing flavors and ingredients from the region to 24 Greenwich Ave. near West 10th Street.
She's working with her husband, John DePierro, who will be the top chef.

His "non-traditional cooking style takes inspiration from his Puerto Rican roots and the 20+ years he spent living in the Southwestern United States," according to an announcement about the opening.
Dishes include pan-roasted pork collar, charcoal grilled short rib and biscochitos with toasted corn ice cream. The menu features smaller plates like roasted delicata squash, chicken meatballs and grilled squid.

Tronco-DePierro was previously the founder of Denver eateries Work & Class and The Justice League of Street Food, the former which racked up four James Beard award nominations. Chef DePierro is a veteran of Row 14, AIX, TAG, Bones, and Mijo in Denver and Rebelle, Miss Ada and Metta in New York City.
Tronco-DePierro curated 1980s and 1990s art to decorate the 75-seat restaurant, with various prints from Jean-Michel Basquiat, Keith Haring, and Ricky Powell.
Its hours are 5 to 10 p.m. Sunday through Thursday and 5 to 11 p.m. Fridays and Saturdays.
