WEST ISLIP, NY - It's been over a year in the making, but the highly anticipated new brewery will be opening in West Islip soon.
West Islip natives, Ken and Katie Srubinski hope to be able to open the Secatogue Brewing Company on 375 Union Boulevard later this month.
An official opening date has not yet been announced while the two wait for final approvals from the Town of Islip as well as the state brewing permit.

The plan to open the business came after Ken had been home brewing his own beer for the past 5 years.

"This was the next step, I really wanted to open a brewery and we were really lucky to find a building in our hometown in a great location with plenty of space, so we're really looking forward to contributing to the local craft brewery community and the local West Islip community," Ken said.

The high school sweethearts moved back to West Islip after the birth of their 4-year-old triplets and started to set roots. Both look forward to contributing to the community.
Ken says the business will most likely lean more towards the hoppier beers or lighter IPAs to go along with the "beach town" feel of West Islip.
The Pink Hibiscus IPA, which actually comes out pink, is already expected to be a fan favorite. The brewery has a total of 10 taps so Ken says he plans to have at least 4 "core beers" available all the time with the other 6 beers constantly changing.

"We're looking to always have something light, something dark, something hoppy and something different at all times," Ken said.
So far, the two have received nothing but good things from the local community.
"We have people stopping in here all the time, they'll just drive by and pull by and introduce themselves and tell us they're rooting for us so we think that just the support from the community has been really good," Katie said.
The two also say West Islip is a great spot for their business.

"It's a very tight knit community," Ken said. "We're the gateway to the beach between two villages - Babylon and Bay Shore - it's a weird little space, we have restaurants we have bars, but it doesn't have a downtown."
"Yea it's mostly medical buildings and facilities like that so we just want to give back to the community, it's such a great place to live and a great palce to raise a family and we just want to help along with all the other business owners to bring an attraction, to have something that Bay Shore or Babylon doesn't have."
