Holiday Recipe: Indian Pudding

The best "finish" for your holiday is a warm, comforting bowl of Indian Pudding, full of flavor and love.

Thanksgiving is a time to be with family and loved ones. Indian Pudding finishes any holiday with flavors that evoke comfort and contentment- it fills the house with aromatic scents of down home cooking.

I always make a double recipe and have an empty casserole dish at the end of the day. Many people have heard of Indian pudding but have never tried it. Pumpkin and apple pies are a staple for Thanksgiving but Indian Pudding should be included as part of the dessert menu. Serving it warm with vanilla ice cream is such a crowd pleaser.

What surprises me the most is most basic question from my family, "What is the main ingredient?" Corn meal surprises everyone. It takes a little longer to bake because it is a custard but it so worth taking the time.

Indian Pudding Recipe

preheat over to 325 degrees

Ingredients:

4 cups of milk

1/2 cup of corn meal

1/3 cup of brown sugar

1/2 cup molasses

1/2 cup maple syrup

1 cup of egg nog

2 large eggs

1 tsp of vanilla

1 tsp of cinnamon

1 tsp allspice

1/2 tsp of ginger

1/4 tsp of nutmeg

1/4 tsp salt

Butter to grease the baking dish

Step 1

4 cups of milk put in a double boiler

1/2 cup of corn meal

Heat the milk and gradually add corn meal for 15 minutes until thickened.

Add spices and salt, molasses, maple syrup and brown sugar to corn meal mixture

Step 2

in a separate bowl

Beat eggs and add 1 cup of egg nog

Temper egg mixture by slowly adding hot corn meal into eggs until it slowly warms up the eggs so they won't curdle...then combine eggs and corn meal together

Step 3

Grease a casserole dish and make sure it can fit into another baking dish. Pour the mixture in baking dish. Place in second dish...fill second dish with water...creating a water bath so the custard will not become rubbery or crack

Place into heated oven for 90 minutes...remove from oven and let cool for 15 minutes...may be a little loose in the middle but will set up as it cools down...serve warm with vanilla ice cream
