Food employees must not touch exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, single use gloves or dispensing equipment. Staff voluntarily disposed of the toast.

The deli slicer had an accumulation of food and debris. The ice machine had a slight accumulation of black and orange residue. The food contact surfaces of equipment must be clean to sight and touch. Deli slicer handout provided to establishment at the time of this inspection.

The cutting boards in the prep unit, next to the cook line are very scratched and scored. Cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Proper thawing methods reviewed. Staff placed meatloaf in the refrigerator to thaw during this inspection.

Cases of beverages were stored on the floor in the lower level storage area. Food must be stored at least 6 inches above the floor. Staff placed all cases of beverages on racks during this inspection.

The 1 Door True Refrigerator was observed held at 50 degrees F. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Per interview of person in charge, potentially hazardous foods were placed in refrigerator since Monday this week. All potentially hazardous foods were voluntarily disposed. Person in charge adjusted the thermostat higher. By the end of the inspection, ambient temperature was observed at 39 degrees F.

The can opener and slicer had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch. Staff washed, rinsed, and sanitized the can opener and slicer during this inspection.

Six containers of chicken salad, located at the grill station, have exceeded the 7 day limit for ready-to-eat foods. Staff voluntarily disposed of the food items.

The facility is lacking test strips to measure the concentration of the quartenary sanitizing solution for the 3 bay sink.

The nonfood-contact surfaces of the hood/vent and areas behind/underneath kitchen equipment have an accumulation of dust, dirt, food residue and other debris. These nonfood-contact surfaces shall be cleaned as often as necessary to prevent buildup of residue.

The handsinks in the kitchen do not have hot water. Service has been contacted. There is hot water available for dishwasher, 3 bay sink, and restrooms.

The facility is lacking a service (mop) sink. At least 1 service (mop) sink or 1 curbed cleaning facility equipped with a floor drain must be provided and conveniently located for the cleaning of mops or similar wet floor cleaning tools and for the disposal of mop water and similar liquid waste.

Meatloaf was observed cooling while still hot and covered in the 2 door true refrigerator. Proper cooling methods reviewed. Per interview of staff, meatloaf was taken out of the oven an hour prior to this inspection. Meatloaf was temped at 73 degrees F. Staff uncovered the meatloaf and placed it in the freezer to allow rapid cooling.

Cookies, smoothies, and chicken tenders packaged in the food establishment are lacking quantity size on their labels. Food packaged in a food establishment must be labeled with the common name of the food, a list of ingredients, the quantity of the contents and the name and place of the business.

The nonfood-contact surfaces of the racks/shelving in all cold hold units have an accumulation of dust, dirt, food residue and other debris. The 2 door true refrigerator, located in the kitchen, are rusty and peeling. Racks shall be replaced or cleaned thoroughly.

The chlorine concentration in the sanitizing solution of the 3-bay sink was greater than 100 ppm. The concentration of chlorine in the sanitizing solution must be between 50-100 ppm. Staff corrected the concentration of chlorine sanitizing solution to 50ppm during this inspection.

Food items packaged in the food establishment are lacking labels of serving size and ingredients. Food packaged in a food establishment must be labeled with the common name of the food, a list of ingredients, the quantity of the contents and the name and place of the business.

The door to the outside, located in the back area, is not tight-fitting. Front door was observed open at the time of this inspection. Establishment shall install a screen to prevent flies from entering. Outer openings of a food establishment must be protected against the entry of insects and rodents by tight-fitting doors.
