Fredericksburg Restaurant Inspections: 11 Violations At 2 Places
The health district found violations at Himalayan Heritage and the Kabob Restaurant in their most recent round of restaurant inspections.
FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses across the Fredericksburg area from May 5 to May 11, including two locations that amassed 11 violations.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- The hood system was noted with Packaging wrapping. EHS discussed to remove packaging before operating the system.
- The following were noted in need of repair: Caulking on the hand washing stations along the kitchen; dump sink along the prep station; caulk the seal gap between the kitchen and cooking equipment; prep tables along the kitchen were noted in need of caulking; the mop sink was noted in need of caulking and certain areas along the base boards were noted with gaps greater than 1/4” in need of caulking or replacement.
- The facility does not have a chlorine test kit to monitor the dishwashing machine. EHS provided a couple strips during inspection to monitor chlorine concentrations.
- The female bathroom does not have a covered trash can. Ensure the facility places at least one closed lid trash can in the female bathroom.
- Coving was noted missing inside the walk-in units and part of the kitchen
- The ceiling tiles are in need of replacement due to absorption. Ensure to obtain a material that is non-absorbent, smooth and easily cleanable where food preparation occurs, such as the bar. Ensure all open ceiling areas are covered before operation.
- Exhaust fan on the dish washing machine area were noted in need of adequate ventilation.
- Approximately 5 lumens were noted inside the walk-in freezer.

- The backdoor was noted in need of repair. The door itself is not self-closing.
- The following were noted in need of repair: remove the plastic on the buffet shelves; replace the ceiling tiles for ones that are smooth, durable and easily cleanable; repair the rusting shelves inside the walk-in freezer.
- The following were noted in need of caulking: the 3-compartment sink, dump sink, hand washing stations.
