Fredericksburg Restaurant Inspections: 14 Violations At One Place

The Rappahannock Area Health District inspected several food service locations and found 14 violations at one restaurant in Fredericksburg.

FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses in the Fredericksburg area from March 10-15, including three restaurants with violations.

Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Perry's Smokehouse, 1925 Sierra Dr Fredericksburg, VA 22405
    • Date inspected: March 11
    • Total violations and corrective actions: 1
    • Violations:
      • Observed accumulation of significant debris on the cooking surfaces of the smoker.
  • Olla Cafe and Bar, 2777 Jefferson Davis Hwy #103 Stafford, VA 22554
    • Date inspected: March 12
    • Total violations and corrective actions: 6
    • Violations:
      • Observed soiled spatula by the flattop grill, knife on a cutting board and two bowls in the washing shelving area.
      • Observed interior surfaces of the microwave oven soiled.
      • Observed interior surface of the ice machine, in contact with dispensed ice, soiled.
      • Observed cocoa powder stored in contact with a plastic shopping bag.
      • Absence of a covered receptacle in the unisex toilet room.
      • Observed the dumpster in poor repair, the lid was bent and cracked preventing adequate closure.
  • El Rincon Del Sabor Bar & Grill, 6322 5 Mile Centre Park 307 Fredericksburg, VA 22407
    • Date inspected: March 16
    • Total violations and corrective actions: 14
    • Violations:
      • The person in charge has failed to actively oversee the responsibility of food employee by the following: 1. Failure to provide employee health training 2. Using handwashing sinks for other means 3. Storing raw foods over ready-to-eat 4. Storing thaw ROP salmon at refrigerated temperatures 5. Not providing an adequate test kit to monitor the concentration of the sanitizing solution
      • The facility does not have supported training documents for employee health. EHS emailed the person in charge a sample copy.
      • The handwashing sink at the bar was noted used for storing soiled towels. The person in charge removed towels during inspection.
      • Raw animal food stored over ready-to-eat food in the reach-in refrigeration inside the kitchen. The person in charge relocated the item immediately.
      • The menu does not have a consumer advisory indicating which items are offered undercooked. EHS discussed which menu items were in need change. The person in charge verbalized understanding.
      • The quaternary ammonium sanitizer was noted above 400ppm. EHS and PIC diluted the solution to 300ppm during inspection.
      • Reduced oxygen packaging salmon was noted thawed inside the reach-in unit without access to oxygen. EHS discussed observation with the person in charge and the salmon was voluntarily discarded.
      • The facility has thermometers, but not a thin probe thermometer.
      • The backdoor was noted with gaps due to the inability to self-close.
      • The ice scoop was noted in contact with ice. Additionally, the scoop for rice, beans, and flour were single use service containers. EHS discuss observation with the Person in Charge and advised the removal or replacement with a handle dispensing equipment to prevent cross contamination.
      • Caulking was noted in need of repair at the dump sink and handwashing station. Please ensure the areas with broken or missed caulking are filled.
      • Foil was noted inside a reach-in unit and at the storage of clean utensils. EHS advised to remove foil.
      • The facility is using a quaternary ammonium sanitizing solution without a test kit.
      • The dishwashing machine and the soda dispensing lines were noted leaking.
    • Additional comments:
      • An in-person inspection was conducted to evaluate the condition of the facility based on a change of ownership request. At the time of inspection, the facility was actively operating without a valid food permit. EHS discussed the need to close and the person in charge voluntarily closed the facility.
