Fredericksburg Restaurant Inspections: 15 Violations At One Place
The health district found violations at four locations in their most recent round of inspections throughout the Fredericksburg area.
FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses across the Fredericksburg area from April 7 to April 12, including four locations with violations.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Employee toilet room door does not completely close, absence of a tight fitting seal. A gap was observed between the door and frame when closed.

- Observed two spatulas, one colander stored over the three compartment sink, one large stainless steel bowl on the shelving unit and food contact surface of a frying pan soiled with food debris.
- Observed cubed ice stored in a plastic shopping bag.

- Employees and conditional employees are not aware of the reporting requirements concerning information about their health and activities as they relate to diseases that are transmissible through food.
- A food employee was observed grabbing the chlorine test kit to test a sanitizer solution and then proceeded to place gloves for food preparation without washing hands.
- Food employees are handling ready-to-eat foods using their bare hands in a facility. EHS discussed observation with the person in charge and advised to rectify actions taken by food employees.
- Ready-to-eat carrots were noted below the raw meats inside the walk-in cooler. EHS discussed observation with the person in charge, and items were relocated during inspection.
- The dishwashing machine was not dispensing sanitizer during operation. EHS and PIC measured the solution at 0ppm. EHS advised the person in charge to use the 3-compartment sink to sanitize equipment.
- A review of the menu with the foodservice operator indicates that there is no consumer advisory for the following foods: tuna, tuna tacos, and ribeye that may be served raw and/or undercooked.
- The facility had thawed tuna inside the reach-in unit in the kitchen under a ROP packaging. EHS advised the PIC to discard ROP tuna. The PIC voluntarily discarded food.
- The kitchen back door is not self-closing.
- Tongs were observed hanging from the 3-compartment sink to be used for food handling.
- The following were noted in need of repair: the tile underneath the ice machine, tile underneath the ice machine, underneath the base of the reach-in freezer, the floors inside the walk-in cooler, porous concrete in the back storage area and several metal shelving throughout the facility.
- A sanitizer test kit for quaternary ammonium is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
- The plumbing behind the ice machine was noted leaking.
- The male bathroom door was not able to self-close during inspection.
- A dumpster and 2 oil containers were noted stored on gravel.
- The following were noted in need of repair: The facility has an open wall hole approximately 3X4 underneath the dish washing machine.
