Fredericksburg Restaurant Inspections: 20 Violations At One Place
One Fredericksburg restaurant was told to temporarily cease operations due to the 20 violations observed by the health inspector.
FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses in the Fredericksburg area from March 16-23, including one restaurant that could not open due to its 20 violations.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- The walls throughout the facility are not smooth and easy to clean.

- Observed hot water in the male and female toilet room hand sinks less than 70°F
- Observed black debris in the red slushy machine which was in contact with the frosted beverage.
- Observed backflow prevention attached to the water line which branches off to the ice machine and slushy machine. Absence of backflow prevention was observed on the water connections servicing the slushy machine.

- Observed a plastic spray bottle containing bleach under the 3 compartment sink that was not labeled. During the inspection, the PIC labeled the spray bottle.

- The dishwashing machine was measured dispensing sanitizer at 0 ppm. EHS discussed observation with the person in charge and advised about using the 3-compartment sink before unit is serviced. EHS and person in charge made chlorine sanitizer measured at 100ppm in the 3-compartment sink during inspection.
- Caulking was noted in need of repair at the dump sink and handwashing station.

- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
- The handwashing sink located inside the kitchen was being used for preparation of raw chicken. Additionally, the handwashing sink at the front of the house was used to store a personal drink and a bottle of burn medication. EHS advised the person in charge to utilize the handwashing sink for handwashing only.
- The facility is offering undercooked Tilapia in Ceviche. The person in charge could not provide documentation whether the tilapia was treated against parasites. EHS advised the person in charge to discontinue the sell of Ceviche until the verification of parasite destruction.
- Marinated raw chicken and raw eggs were noted above ready-to-eat vegetables, pulled chicken among other ready-to-eat foods.
- A whole chicken was noted at 59 degrees Fahrenheit. Per discussion with the person in charge, the chicken was placed inside the refrigeration unit the day prior. EHS advised the person in charge to discard the chicken and the PIC voluntarily discarded.
- The following was noted above 41 degrees Fahrenheit: sliced tomato dish (51). EHS discussed observation with the person in charge. Per PIC, the sliced tomato dish was prepared over 4 hours. During inspection, the person in charge voluntarily discarded food item.
- A date marking system is not in proper use for ready-to-eat (RTE) foods in the refrigeration units. Various foods such as chica morada, cooked chicken, etc., were observed with a name but no date marking throughout the facility.
- The Ceviche offered is undercooked. EHS advised the person in charge to place a disclaimer.
- The following was observed during inspection: Quaternary ammonium stored above soda bottles, a chemical over prepackaged condiment, and hand sanitizer next to dispensing juices, sanitizer bucket next to to-go cups. The person in charge removed chemicals during inspection. Additionally, discussion was had to remove single service items away from bags of charcoal at the storage unit outside the facility.
- Thawed fish was noted in the refrigerator. EHS discussed ROP with the person in charge. The PIC voluntarily discarded fish.
- The backdoor is not self-closing and tight-fitting. This may allow the entry of insects or rodents. Observation was discussed with the person in charge.
- Multiple containers of sodas were observed stored on the floor next to a reach-in unit at the lobby. EHS discussed observation with the person in charge.
- Caulking was noted in need of repair at the handwashing stations in the kitchen and bathrooms. Additionally, the 3-compartment sink and mop sink was noted in need of caulking.
- Coving was noted damaged or missing throughout the facility.
- Tortillas were noted in direct contact with a grocery bag. EHS discussed observation with the person in charge and advised to relocate tortillas in food grade materials.
- The facility has cover several areas with foil for equipment storage and single service items.
- A test kit or other device that accurately measures the concentration of the sanitizing solution is not provided. EHS advised to gather a QT 10 if continued to use the Quaternary ammonium pills.
- The following were noted soiled: counters at the service area, the interior fryer cabinets, the interior of refrigeration systems, wire racks for dry storage areas, especially next to the charcoal oven.
- The following areas were noted soiled: behind the oven was noted heavily soiled with ash on floor and wall, floors underneath the service areas, floors and walls behind the fryers were noted heavily greased.
- Observed employee possessions stored on top of single service items along the dry storage area and above foods inside the refrigeration system in the kitchen.
