FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses in the Fredericksburg area from Feb. 23 to March 1, including four restaurants with violations.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

- Observed food contact surfaces of the only meat slicer in the facility soiled with debris.
- Observed the prep cooler holding at 50°F. The unit was set on the coldest temperature setting.
- Observed multiple stainless steel ladles and food containers on the shelving unit in the ware-washing area stored in plastic shopping bags.

- Observed the only thin probed food thermometer bent and exterior coating eroded exposing a surface which is not smooth and easily cleanable.
- Observed accumulation of debris on the base of the three pizza ovens, shelving under the cooking surfaces and the pizza dough equipment.
- Hot water heater is not meeting hot water demands on the mobile unit. Observed hand sink and 3 vat sink hot water temperatures of 77°F and 76°F, respectively.
- The person in charge could not provide an approved food grade hose to fill fresh water tank. The person in charge provided a clear plastic tube and plastic funnel used to fill the fresh water tank from a bucket on the mobile unit. Unable to verify if the materials are food grade.
