FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District conducted six routine inspections of food storage and preparation businesses in Fredericksburg from Feb. 3-16.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Violations:
- This food establishment does not have a Certified Food Protection Manager with a passing examination. Currently pending a passing or failure score and an expiration date.
- A backflow prevention device is missing at the ice machine located at the bar, and an evaluation of the soda carburetor backflow prevention device is pending to determine if the unit has one.
- Approximately 8-9 lumens were noted inside the walk-in cooler.

- The basins inside all refrigeration units in the bar were noted soiled.

- The cabinets at the server station were not sealed. The bar has areas of exposed woods rough to the surface.
- The following were noted in need of repair or proper adjustment: The walk-in cooler shelving were noted rusted. Pieces of coving was noted damaged or missing inside the walk-in cooler. Pieces of tile were noted damaged or missing underneath the ice machine. The walk-in cooler floors were noted unsealed.
- The backdoor was not able to self-close completely.

- The facility does not have a thin probe thermometer to measure thin meats.
- The sauce lids, different dispensing equipment were noted soiled.
- The quaternary ammonium sanitizer dispensing unit was not dispensing sanitizer at the 3-compartment sink; it was measured at 0 ppm.
- The soda nozzles were noted soiled.
